Lamington Paleo Energy Balls

These delicious balls are a great alternative to reaching for that refined sugar laden chocolate bar during the dreaded 3pm slump. They can also be used as caffeine free alternative to pre-workout for you gym lovers out there! Medjool Dates are loaded with vitamins and minerals as well as tasting like sweet caramel.
Nut-free, Gluten-free, Dairy-free, Vegan, Paleo

INGREDIENTS

  • 21 dates (preferably Medjool)

  • 150 g desiccated or shredded coconut

  • 1.5 tsp vanilla bean paste

  • 2 tsp cacao powder

  • 1.5 tbsp coconut oil

METHOD

​

  1. Remove pits from dates

  2. Melt coconut oil and place all ingredients into food processor.
    Mix until ingredients well combined

  3. Roll into balls of your desired size and refrigerate for 2 hours
